The difference between a good kebab and an exceptional one is almost never the spice mix. It is the time given to the marinade to work through the meat — to break down the fibres, to carry the flavour all the way to the centre, to ensure that the first bite delivers everything the outside promises.
Our marinades are prepared the night before. Every day without exception. The lamb chops sit in an oil and herb marinade that includes fresh lemon, garlic, and a proprietary spice blend we have been using since we opened. The chicken — shish tawook, chicken kebab — marinates in a yoghurt base that keeps the meat moist through the high heat of the charcoal. The kofta is seasoned and shaped daily.
We use natural charcoal throughout service. No gas burners, no hybrid setups. Our grill team manages the fire continuously to ensure the right temperature zone for each cut — high heat for searing, lower zones for finishing. This is the only way to produce what we produce.
Each item is marinated for 24 hours, grilled over natural charcoal, and served with traditional accompaniments.
